Fruity Quorn Curry Recipe

(serves 3)

Ingredients

  • 3 tsp mild curry paste
  • 2 tbsp apricot chutney
  • 1 small (8oz) tin chopped tomatoes
  • 1 tbsp sultanas
  • 3 tbsp water
  • 4½oz Quorn pieces
  • 1 medium onion, sliced
  • 2oz mushrooms, sliced
  • 1 small yellow pepper, deseeded and sliced
  • 1 medium carrot, cut into strips
  • 1 stick celery, chopped
  • 1 medium red apple, cored and chopped

    Method

  • Blend the curry paste, chutney, tomatoes, sultanas and water in pan. Cook for 2 minutes.
  • Add the Quorn and onions. Simmer for 5 minutes to allowe the Quorn to absorb the flavour of the sauce
  • Add the pepper and carrot. Cook for 5 minutes. Add the mushrooms and cook for 1 minute
  • Just before serving, add the celery and red apple, and heat through
  • Serve with boiled rice
