Peanut Bite Snacks – Quorn Recipe

(Serves 3 as a snack)

Ingredients

  • 4½oz Quorn pieces
  • 2 tbsp peanut butter
  • 2oz wholemeal breadcrumbs
  • 1 egg, lightly beaten
  • Oil for frying
    Tomato dip

  • 4 tbsp low-calorie mayonnaise
  • 2 tsp tomato puree
  • 4 tsp natural yoghurt
  • 3-4 drops tabasco sauce

    Method

  • Spread peanut butter generously along one side of each piece of Quorn
  • Coat in beaten egg and roll in breadcrumbs
  • Fry in an inch depth of hot oil in a frying pan until golden brown
  • Drain on kitchen paper and serve immediately
  • To make the tomato dip, blend all the ingredients together and serve in a small bowl.
