Raw Chocolate Truffles recipe – scrumptious!

Christine’s Super food Truffles
You can guess what my family will be eating at Christmas!! These are scrummy little sweets enjoyed by adults and children alike. On our festive cookery day the children loved making these and eating them.

These are delicious served instead of shop bought chocolates and full of such amazing super foods they will keep you energised all day. Store these in the fridge – they can also be frozen.

125g pecan or macadamia nuts
60g dried cranberries
8 soft dates
1 tbsp Lucuma powder
1tbsp maca powder
4tbsp raw cacao powder
2-tbsp raw honey or sweet freedom
1tbsp bee pollen granules
Raw Cacao powder, chocolate flakes or desiccated coconut to roll the truffles in.

1. Blend the nuts to form a fine powder.  Place in a food processor. Add the dried fruit and blend in to the nuts.  Then add the remaining ingredients and mix to form a slightly sticky paste.
2. Form the mixture into walnut size balls then roll in the cacao, chocolate flakes or coconut.
3. Allow to harden in the fridge for 30 minutes.

Nakd Rhubarb & Custard

Last week I wrote about some new Scottish fruit and oat bars, known to be healthy for their unprocessed ingredients.

nakd are a Welsh company who have been doing it for ages…

The main difference being nakd’s raw ingredients tend to be a mixture of fruit and various nuts.

RAW WARS?

If there’s any sense of a ‘raw war’ between the two nations then the Welsh have just upped the ante with a new Rhubarb & Custard flavour.

I don’t know about you, but the flavour appeals simply because of my schooldays spent saving up pennies to buy my favourite sweets from the corner shop, especially the hallowed Rhubarb & Custard flavour!

But there’s not one bit of added sugar or syrup here, simply 100% natural ingredients. The bars are vegan, dairy free and gluten free with a soft, chewy texture that will fill you up till your next meal and most likely count towards your 5 a day too.

nakd make lots more flavours too, such as mocha, ginger bread and apple pie, but, if you’re not convinced by my nostalgic excitement over childhood flavours, read this feedback and weep…

Raw Cacao & Pecan Cake recipe (gluten, dairy, soya and egg free!)

Raw Cacao & Pecan Cake

Free from gluten, dairy, soy and egg!

Serves 8
Preparation time: 15min
Cooking time: 45-50min

170g/6oz organic Dove’s Farm Gluten Free Plain Flour
110g/4 oz organic raw cacao powder
110g/4 oz organic coconut sugar
2 tbsp organic raw honey
1 sp organic vanilla extract
1 tsp Organic Dove’s Farm Baking Powder
1 tsp Dove’s Farm Organic Bicarbonate Soda
250ml Organic Biona Coconut Milk
170g/6oz Organic Biona Coconut Oil
125g organic pecan nuts

1. Preheat the oven to 170°c, 340°f, gas mark4
2.  In a large mixing bowl sift the flour, cacao powder, baking powder, bicarbonate of soda and sea salt.
3. Place the coconut oil, milk, sugar, vanilla and honey in a saucepan and melt on gently on a low heat.
4. Make a well in the middle of your dry ingredients and pour the melted wet ingredients in. Mix using a whisk (electric or hand) until there are no lumps.
5. Using a rolling pin smash the pecan nuts (inside a bag) into small bite size pieces. Sprinkle 2/3 of the nuts into the mixture, combining with a wooden spoon.
6. Grease a false bottomed cake tin thoroughly with coconut oil and pour your cake mixture in. Sprinkle the rest of the nuts onto the top of the cake.
7. Bake in the middle of the oven for 45-50 minutes until a skewer comes out clean from the centre of the cake. NOTE: if the top of the cake starts to burn simply cover with a sheet of greaseproof paper.
8. Once cooked carefully work your way around the edge of the cake with a knife to loosen, and then using an oven mitt gently push the cake up from the bottom and out of the tin. Set on a wire rack to cool. Once slightly cooled remove the cake tin base from under the cake.
9. Dust with a little icing sugar.

Here we go round the mulberry bush (especially when they’re covered with chocolate)

These berries have a wonderfully refreshing tart flavour about them, and they taste pretty good as dried fruit too. They are highly nutritious and rich in antioxidants.

But, as is the way with all good fruit, someone has gone one better and covered them with chocolate. Raw chocolate from the Raw Chocolate Company to be exact.

The result is a tantalising mix of dark chocolate and sweet mulberries that makes for an excellent dairy free and gluten free organic treat.

It’s getting easier to buy unpasteurised milk

Unpasteurized milk is lauded by its supporters for its superior quality.

It is argued that raw milk has more vitamins, beneficial enzymes and ‘friendly’ bacteria. 25% of milk’s vitamin C is said to be lost through pasteurisation.

fresh milkIt is also believed to be easier to digest and, apparently, studies show it can reduce allergies such as asthma and hayfever. Some even believe the saturated fat found in the cream is good for you.

But surely the best arguement is that it tastes better? When pasteurised milk is heat treated it loses its flavour.

Now, while it is still difficult to get hold of unpasteurised cow’s milk, it is possible to get raw, active, unpasteurized goat’s milk – just like real milk should be!

You can try a brand known as Chuckling Goat. The taste is mild and sweet, and not ‘goaty’ at all.

There was a time when unpasteurised milk was understandably risky, because of bacterial infection, but hygienic methods have substantially improved since the days of Louis Pasteur.

Chuckling Goat are licensed to sell raw goats milk; both the goats and their milk are regularly and rigorously tested to ensure stringent standards of safety and purity.

With 0.1g fat they are actually air dried pieces of thinly sliced fruit. Personally I think they are excellent because you can enjoy a fruity crunchy snack for less than 70 calories.

Perry Court Farm make sweet apple, tangy apple and dried pear crisps – all of which contribute to your five-a-day of fruit and veg, and make just about the most healthy, natural snack around (especially if you’re not so hot on apples).

The fruit crisps are made at the local farm in Kent simply by slicing them up and then blowing warm air over them until the slices of fruit becomes crispy. Using this method actually keeps all the goodness of the apple in the crisp.

The wholefoods revolution

Fifty years ago healthy eating consisted of milk, eggs, fruit and veg with a lot more carbs on the plate too. There was no such thing as a health food shop.

Snackbar created to support the protection of honeybees

While speculation continues, one thing remains certain, bees are dying.

A third of UK bee colonies have vanished over the last two years, according to the Soil Association, due to unethical farming practices. Worryingly, one third of the food we eat depends on the pollination work that is done by bees.

Thankfully, people are taking notice. Scientists are doing research, governments are being petitioned.

Now, the latest step is an organic berry bar and chocolate bar have been brought out, a percentage of the proceeds of which goes towards the Bee Guardian Foundation, an organisation that encourages everyone to get involved in looking after bees in some way.

The bars are called Beond bars and they are made Raw, vegan, gluten and soya free.
